Spinach omelette without egg

The texture and taste are incredibly similar to a classic omelette. It can be done with or without vegetables, ideal to start your morning with something protein.

Preparation

  1. In a bowl you combine all the ingredients listed (the spinach can add it well-minced and raw or you can whiten it in hot water 1 minute before it is milder) and mix until everything is integrated.
  2. Let the chickpea flour absorb some of the liquid and the mixture thickens for about 5 minutes.
  3. After this time I transferred the preparation to a previously oiled pan over medium low heat and let it be cooked for a few minutes until it looks golden.
  4. With the help of a spatula turn to the omelette and let it be cooked on the other side until it looks golden.
  5. After this time, you only have to pluck and enjoy it.
