For tortillas:
2 and ½ cups of whole flour
½ cup olive oil
1 cup of warm water
1 cda of salt (Rinde for 5 large tortillas for burritos)
For filling:
2 half-peeled and cut potatoes in cubes
1 cdita of oregano
1 cdita of sweet pepper
Sal at ease
1 cup of rice
3 cups of vegetable broth
2 cups of cooked black pods
2 cds olive oil
1 pat
Optional for toppings: cabbage salad, curved purple onions or any other fresh or curved vegetable is fine
Preparation
- It will start by preparing tortillas by combining flour, water, salt and oil in a bowl. With the help of your hands you will integrate everything until a mass is formed that you can transfer to the plateau. The whole flour tends to absober a lot of water, so you can gradually adjust the amount of it needed.
- Once you transferred the dough to the plateau, knead it until it is smooth and let it rest covered for 20 minutes. After this time, separate it into 5 buns and stretch it in circle form as thin as you can. I like to cook it back and forth in a pan (you don't need to put oil on it) until it looks slightly golden. Once ready, separate them and cover them with a repeller because they dry easily.
- For the filling you are going to bake the potato cubes on an oven plate with a little oil until they look well golden (for about 25 minutes) and then you are going to sprinkle the oregano, the pepper and the salt at ease.
- While you're going to boil the rice cup in the three cups of vegetable broth until it completely evaporates and the rice is left to the dente. During that time you can condiment the black porotes, I only add a little olive oil and salt and you can cut the palta into slices.
- Finally you only have to assemble your burritos by combining all the ingredients of the filling over the omelet by carefully closing it so that nothing will escape. You can gold back and forth your burrito in a little bit of oil to make it crochant on the outside, but it's optional. If you only eat 1, the rest you can freeze for later.
